Cream of the crop

Cream of the Crop

American hybrid squash of the “acorn” type.

Shape: Round and ribbed ending in a cone on the umbilicus side. Color: Ivory then yellow with age. Flesh: Creamy color, firm, little or no sweetness, with a nutty taste.

Butternut

Butternut

American variety, quite late.

Shape: Cylindrical, terminated in a bump, takes the shape of a bell, pear or peanut. Color: Smooth, ocher, very dark beige. Flesh: Yellow to yellow-orange, firm but tender, excellent fragrant squash. The swollen part contains seeds, but the cylindrical part is completely full.

Pink Banana

Pink Banana

American squash popular in California.

Shape: Cylindrical, rounded on the peduncle side, tapering on the umbilicus side (banana-shaped). Color: Gray-green then pink when ripe, slightly rough. Flesh: Thick, firm, fine-grained, sweet, bright orange, of good quality.

Galeux d’Eysines

Galeux d’Eysines

Squash native to South America.

Shape: Spherical, flattened at both ends. Color: Pink, more or less covered with large corky scabs. Flesh: Excellent, very thick, yellow-orange in color, tender and sweet.

Spaghetti

Spaghetti

Squash native to Mexico and Central America.

Shape: Oval to elongated. Color: Dark yellow. Flesh: Not very thick, light yellow, after cooking, give firm filaments (spaghetti style), but not very fragrant.

Hybrid squash.

Shape: Oval to elongated. Color: Yellow-orange to dark orange. Flesh: Not very thick, orange, gives after cooking filaments (spaghetti style) firm and fragrant.

Rouge Vif d’Etampes

Rouge Vif d’Etampes

French squash one of the best known and most cultivated in Europe.

Shape: Spherical, very flattened or even curved at each end, ribbed and often bumpy. Color: Bright red. Flesh: Thick, yellow-orange in color, tender.

Blue Hubbard

Blue Hubbard

Squash native to South America.

Shape: Slightly ribbed, oval, pointed on the peduncle side and umbilicus side (looks like a lemon). Color: Plain bluish gray-green, adorned with bumps. Flesh: Thick, dry, yellow-orange in color, sweet, not very sweet, fine-grained, good quality.

Acorn Squash

Native to North and Central America.

Shape: generally almost spherical but crisscrossed with deep veins. Color: generally dark green skin. Flesh: Pale golden which has an aromatic and sweet taste with a slight nutty flavor.

Sucrine du Berry

Sucrine du Berry

French variety.

Shape: Cylindrical, terminated in a bump, adopts the shape of a bell (pear, peanut). Color: Dark green, lightening to pale ocher yellow. Flesh: Light orange, tender, sweet filamentous, crunchy, good quality.
