BBQ Mini Potato Packet

Infused with fresh herbs, these potatoes bring summertime flavor to every bite. Prep and cleanup is a breeze for backyard dining.

Ingredients

  • 1 pound (500g) mini potatoes, cut in half
  • 1 teaspoon (5ml) fresh rosemary, chopped
  • 1 teaspoon (5ml) fresh oregano, chopped
  • 1 teaspoon (5ml) fresh thyme, chopped
  • 2 garlic cloves, minced
  • ⅓ cup (80ml) olive oil
  • sea salt
  • freshly ground pepper
  • herbs for garnish

Method

Heat the grill to medium high.  In a large bowl, combine the olive oil, herbs and garlic. Add the potatoes and coat thoroughly.  Season with salt and pepper.

Arrange the potatoes on a large piece of aluminum foil and fold the edges to make a sealed tin foil packet, seam side up.   Place the foil packet on the grill over medium heat for 40-45 minutes until the potatoes are tender.  Serve potatoes in foil rolling the edges back to make a bowl.  

Garnish with sprigs of fresh herbs.
