Preheat the oven to 475°F/250°C.
Lightly oil the cast iron skillet [10-12” (25-30cm)] and set over medium heat. Add sliced onion and sauté for 1 minute and then add sausage meat. Using a wooden spoon, crumble the sausage meat and cook until browned. Remove the meat and onion mixture to a bowl and wipe the cast iron skillet with a paper towel to remove any excess pan drippings. Set the skillet aside to cool and prepare to roll out the pizza dough.
Roll the pizza dough 2” (5cm) larger than the diameter of the skillet base. Gently roll the dough onto the rolling pin and transfer to the skillet. Gently press the crust across the bottom of the pan and up the sides of the skillet. Sprinkle ½ the mozzarella across the bottom then spread the pizza sauce and top with the sausage/onion mixture. Add a bit more mozzarella cheese and then place the cured sausage slices, olives, sliced chili peppers, and the rest of the mozzarella cheese on top. Adding the layers of mozzarella allows the pizza toppings to stick together.
Bake for 15-20 minutes until the crust is golden brown and the mozzarella is soft and bubbly. Let cool for 5 minutes before serving and cut into wedges.
