Add pizza dough to a lightly flour dusted counter or board. With your hands, shape and press the dough making a thin circle. Transfer the pizza to a wood paddle or lightly oiled pan. Pinch the sides to create a raised crust. Ladle fresh tomato sauce on top of the crust and spread with the back of a spoon to just touch the crust. Make sure not to add too much sauce. Add cubes or grated pecorino cheese. Bake as directed.
Wood Oven: 60-90 seconds (edges should be golden and slightly charred)
Conventional Oven: 475°F/246°C - 12-14 Minutes (bottom and crust should be golden brown)
