Core, remove seeds and cut the pears into small ¼” (6mm) pieces. In a saucepan, mix the pears, lemon juice, vanilla and maple syrup.
Simmer over very low heat for 10 to 15 minutes, stirring occasionally. Remove from heat and let cool before putting in jars.
