Preheat the BBQ to medium heat, 350F/232C. If using wooden skewers, soak for 30 minutes. Prepare all your skewer ingredients, cutting to the same size and shape, then feed onto the skewer sticks. Brush the skewers lightly with olive oil. Oil the grill. Cook meat skewers for 12-15 minutes, fish skewers for approximately 10 minutes and vegetable and fruit skewers for 8-10 minutes, depending on thickness. Rotate evenly.
