Cauliflower Rice

Cauliflower rice is a deliciously nutritious replacement for rice. It is a great way to add more vegetables into your day and is easily fried up in ten minutes.

Ingredients

  • 1 large cauliflower, cut florets into small pieces

Method

Place the cauliflower into a food processor and pulse until it resembles grains of rice.  Remove and place onto paper towel or a clean towel and press out any excess moisture. *

To make fried rice, simply add 1 tablespoon (15ml) olive oil to a large skillet and heat to medium heat.  Add the cauliflower rice and cover with a lid to allow it to become tender and moist.  Cook for 6-8 minutes, stirring occasionally. At this point, season to taste with salt and pepper and any herbs and spices.

Cooked rice can be stored for up to 3 days in the refrigerator.  

*Chef Note:  Uncooked cauliflower should be used immediately or frozen for up to 4 months.
