Ingredients

  • 2½ cups (375g) cantaloupe (about 1 medium cantaloupe), cut into chunks
  • ¾ cups (180ml) water
  • 1 tablespoon (15ml) fresh lime juice
  • 1 tablespoon (15ml) maple syrup
  • ice

GARNISH

  • mint leaves

Method

In a blender, puree cantaloupe until smooth.  Pour through a fine strainer to separate the pulp. Discard or save the pulp for later.

Pour liquid cantaloupe into a pitcher. Add water and lime juice and stir. Sweetened with maple syrup to taste. Keep chilled in the fridge until ready to serve.

Serve with cantaloupe chunks, ice and a sprig of mint.
