Campfire Baked Apples Stuffed with Nuts and Dried Fruit

Ingredients

  • 4 large apples, such as Gala or Granny Smith
  • 2 tablespoons (30 ml) lemon juice
  • 2 tablespoons (30 ml) maple syrup
  • ¼ cup (40 g) cranberries, dried
  • 2 tablespoons (20 g) raisins
  • 2 tablespoons (20 g) walnuts, chopped
  • ¼ teaspoon (1.25 ml) cinnamon, ground
  • ⅛ teaspoon (0.75 ml) nutmeg, ground
  • 1 tablespoon (15 g) butter, unsalted, softened

Method

Using a knife of an apple corer carefully core: 4 large apples , such as Gala or Granny Smith. Be sure not to break open the apples. Brush the inside of the apples with 1 tablespoon (15 ml) lemon juice. Place each apple on their own a 10-inch (25 cm) square sheet of aluminum foil. 

In a small bowl, mix 1 tablespoon (15 ml) lemon juice, maple syrup, cranberries, raisins, walnuts, cinnamon, nutmeg, ½ tablespoon (7.5 g) butter. 

Press dried fruit mixture into the center of each cored apple. Cut into four pieces: ½ tablespoon (7.5 g) butter. Place one piece of butter on top of each apple, over the center filled with the dried fruit mixture. 

Wrap each apple tightly with the aluminum foil. Place aluminum foil wrapped apples in hot coals, not onto open flame, and cook for 15 minutes. 

Keep checking your apples. If coals are too hot, remove from coals and place on a grate over the coals. 

Apples are done when they feel tender when squeezed. Serve warm.
