Summer Watermelon Salad with Feta and Mint

Ingredients

  • 12 – 2″ (5 cm) cubes of watermelon, seedless
  • ½ cup (75g) feta, crumbled
  • fresh mint

VINAIGRETTE

  • 2 shallots, minced
  • 1 tablespoon (10g) fresh ginger, peeled and grated
  • ½ cup (120ml) balsamic vinegar
  • 1½ teaspoons (7.5ml) lime juice
  • 1½ cups (350ml) olive oil
  • 2 tablespoons (30ml) soy sauce
  • 1 tablespoon (12.5g) sugar

Method

Arrange watermelon pieces onto a large platter or on individual plates. Add crumbled Feta over top of each piece of watermelon and garnish with a mint leaf or chopped mint. Top with vinaigrette.

VINAIGRETTE

Finely mince shallots and place in a medium bowl. Add ginger, balsamic vinegar, lime juice, soy sauce, and sugar. Whisk till blended. Slowly add olive oil and combine until emulsified.
