Royal Icing

Makes about 2 cups of Icing

Ingredients

  • 3 cups (330g) icing sugar (you can also used sifted powdered sugar)
  • ¼ teaspoon (1g) cream of tartar
  • 2 egg whites, room temperature (3 tablespoons (45ml) meringue powder can replace egg whites)

Method

Using a stand mixer with whisk attachment, beat icing sugar, cream of tartar, and egg whites on low speed for 3-5 minutes.  Scrape down the bowl, and beat for another 7-10 minutes until mixture is stiff and shiny.  Add more icing sugar if necessary to add more stiffness.  Divide icing into separate bowls and stir in food coloring for desired colors.   Place icing into a piping bag with a small plain tip.
