Line a baking sheet with parchment paper. Prepare the squash. Wash the skin thoroughly and carefully cut the squash in half. Remove the seeds and discard.
Place the squash cut side up on the baking sheet. Season with sea salt and freshly ground pepper. Drizzle with extra virgin olive oil.
Bake for 40-45 minutes until fork tender and the flesh is soft. Remove from the oven and serve squash in its skin.
