Layered Turkey Casserole

Ingredients

  • 1-2 cups (330-660g) dressing 
  • 2 cups (660g) leftover turkey pieces/slices
  • 1-2 cups (330-660g) sweet potato or turnip 
  • 2 cups (660g) mashed potatoes
  • salt and pepper to taste

Method

Preheat the oven to 350°F/176.6°C. 

Lightly grease a casserole dish with butter or oil. Add the dressing and completely cover the bottom of the dish.

Next, layer the turkey covering the dressing.  Season to taste with salt and pepper.

Add a layer of sweet potato or turnip and top with mashed potato. Spread potatoes and create a decorative pattern with a fork or spoon. Season top with salt and pepper.

Cover with aluminum foil and bake for 25-30 minutes at 350°F/176.6°C or until hot.

Serve with gravy and cranberry sauce.
