Clean beets and radishes. Remove blemishes and ends. Thinly slice the beets by hand or by using a mandoline and add to a bowl of cold water. Prepare the radishes the same way and add to a separate bowl of cold water.
Fill a large pot with salted water and bring to a rapid boil. Fill a large bowl with cold water and ice and set aside. Wash and trim the beans and add to the boiling water for 2 minutes or until they start to turn bright green. Remove immediately and place the beans in the cold water bath.
Drain the beets, radishes and green beans and dry with paper towels. In a large frying pan, add 3 tablespoons (45ml) of olive oil and set to medium-high heat. Add the beets and saute for 3-4 minutes until cooked but still al dente. Add radishes and saute for 1 minute, adding a little more oil if required. Remove the beets and radishes and set aside. Add the green beans and saute for 1-2 minutes in olive oil. Add salt and pepper and combine with beets and radishes. Toss and plate. Serve warm or at room temperature. Add seasoning to taste.
