Cilantro Lime Slaw

Makes 4 - 6 Servings
The zest and juice from the limes along with the fresh cilantro in this recipe give a refreshing zing to every bite of this slaw. It’s an ideal side for pulled pork, tacos, chilli or any other dish to give it an added boost of flavor and crunch.

Ingredients

  • ½ cup (120ml) mayonnaise
  • ⅔ cup (160ml) sour cream
  • juice of 3 fresh limes
  • 2 teaspoons (10ml) finely grated lime peel, zested
  • 2 jalapeño peppers, seeded, finely chopped
  • ⅓ cup (80ml) chopped fresh cilantro
  • 4 cups (950ml) thinly sliced green cabbage
  • 4 cups (950ml) thinly sliced purple cabbage
  • ¼ cup (60ml) green onions, finely diced

Method

Mix mayonnaise, sour cream, juice of 2 limes, zested lime peel and jalapeño peppers in a large bowl.

Add cabbage, green onions and cilantro and toss to cover evenly. Season with salt and pepper.

Cover bowl with wrap and chill for 1 hour.

Just before serving add juice of 1 lime and toss.
