Preheat the oven at 100°F/38°C and place the grill in the center. Cover a cooking sheet 13 in x 18 in (33cm x 45cm) with parchment paper, set aside. Peel apples and cut into 2 in pieces. Place the apple pieces into a heavy saucepan with honey, and simmer at low heat for about 10 minutes, or until all the pieces have thoroughly softened. The time required will vary proportionally to the size of the apple pieces, the smaller they are the quicker they will cook.
Reduce the apple and honey mix into a smooth puree with the help of a hand-held mixer. Using a spatula, spread one cup of mix onto the parchment-paper covered baking sheet into a thin layer of paste.
Cook for 2 ½ to 3 hours, and let cool completely. Be mindful not to overcook the paste, lest they become apple chips (which aren’t bad either).
Cut lengthwise into 3-inch (7.62cm) wide strips, and roll up into little bundles.
Can keep for up to a month in a hermetically sealed container.
