These Yogurt Fruit Bars are nutritious and delicious!
Makes 8 Servings
1½ cups (180 g) Whole Wheat Flour
¼ cup (40 g) Splenda
1 teaspoon (2.5 g) Baking Soda
½ teaspoon (1.25 g) Baking Powder
1 teaspoon (2.5 g) Cinnamon
½ teaspoon (1.25 g) Ground Ginger
1 (6 ounce) package Mixed Dried Fruit, coarsely chopped
1 cup (225 g) plain fat-free Yogurt or 1 cup (225 g) low-fat plain Yogurt
1 large Egg
½ cup (120 ml) Apple Juice
2 tablespoons (30 ml) Oil
Nonstick cooking spray
Preheat the oven to 350°F/100°C.
In a large bowl, mix all dry ingredients. Add dried fruits.
In a medium bowl, combine yogurt, egg, apple juice concentrate, and oil. Make a well in the center of the dry ingredients and add the wet ingredients until blended.
Coat a 9” x 9” (23 cm x 23 cm) pan with vegetable spray, spread batter in pan.
Bake 35-40 minutes or until done. Cool 10 minutes before slicing.
Slice into 8 servings. Freeze in individual portions if desired.
