Makes 8 serving
4 cups (480 g) plain flour
4 teaspoons (20 ml) baking powder
2 teaspoons (10 ml) fine salt
½ cup (120 ml) olive oil, plus more for drizzling
1½ cups (350 ml) warm water
2 tablespoons (30 ml) chopped fresh rosemary, plus more for sprinkling
½ cup (45 g) grated Parmesan cheese
Mix flour, baking powder and salt in a large bowl.
Add olive oil, water and rosemary and mix well. Work the dough until it gets smooth.
Take a piece of dough and roll it into a long sausage shape. Drizzle with Olive oil and sprinkle with rosemary leaves and Parmesan cheese.
Take a clean stick and twine the bread around the end. Bake over an open fire or in a fireplace for about 5 minutes.
