Makes 2 Servings

Ingredients

3 cups (450g) fresh pineapple cut into chunks, frozen
1 cup (240ml) coconut milk
3 ounces (80ml) White Rum
2-3 tablespoons (25 - 37g) sugar (to taste)
Pineapple juice, if necessary

Method

Cut fresh pineapple into 1 inch (2.5cm) chunks and place in the freezer for at least an hour.

In a food processor or blender, mix together frozen pineapple, coconut milk, rum and sugar. We like that the texture is very thick, but it will melt while you drink it and stay very cold. You can always add pineapple juice to have it less thick.
