Ingredients - Plain Pastry

2 tablespoon (30 ml) flour
1/2 cup (120 ml) white sugar
1/8 teaspoon (.625 ml) salt

Ingredients - Filling

4 cups (960 ml) fresh blueberries
1 teaspoon (5 ml) lemon juice
1 tablespoon (15 ml) margarine or butter

Method

Preheat the oven to 450°F/232°C.

Line 9” (23 cm) pie pan with plain pastry. Mix together flour, sugar and salt. Sprinkle ¼ of mixture on uncooked bottom crust; add blueberries; add remainder of sugar mixture; sprinkle with lemon juice; dot with margarine or butter. Adjust top crust.

Bake in hot oven, 450°F/232°C for 15 minutes; reduce heat to 350°F/100°C; continue baking until berries are tender.
