A great bread to serve with a big bowl of chili!

Makes 4-6 servings


3 cups (750ml) self-rising flour
1/4 cup (60ml) sugar
1/2 cup (125ml) cheddar cheese
3 green onions, thinly chopped
1 jalapeno pepper, seeded and diced
1 bottle beer
1/4 cup (60ml) butter, melted


Preheat the oven to 375°F/190°C.

In a large bowl, mix together the flour, sugar, cheese, onions and jalapeño pepper. Add in the beer and mix together to form a thick batter. Pour into a greased 9X5 loaf pan and brush the top with melted butter.

Bake for 45 minutes or until loaf sounds hollow when tapped. Remove from oven and let cool for 10 minutes before removing from pan.
