Canadian Back Bacon on a Bun

A Canadian original! Real back bacon also known as peameal bacon is made from lean boneless pork loin which has been trimmed and rolled in cornmeal. It was originally developed by a Toronto ham and bacon curer, William Davis in the late 1800s and has become a renowned Canadian classic.

Ingredients

  • 8 slices Canadian back bacon (aka Peameal bacon)
  • 4 slices fresh tomato
  • Kozlik’s Amazing Maple Mustard (or favourite mustard)
  • 4 buns, toasted

Method

Canadian back bacon is easily grilled on the BBQ in minutes by grilling each side for 2-3 minutes.  Assemble each sandwich by laying 2 slices of bacon on the bottom of the toasted bun, smear on a generous amount of Kozlik’s Amazing Maple Mustard, top with a fresh slice of tomato and the top bun.

Now take a big bite!

Chef Note:  Back bacon can be pan fried. Place the bacon slices in a lightly oiled skillet over medium heat for 2-3 minutes on each side until golden brown.
